    I recently attended the one day sourdough course as a surprise from my wife. Having never attempted to bake any bread, I was a little apprehensive about what the results might be. I needn’t have worried as Mark is clearly an expert and his instructions were clear and informative, discussing not only how to make the sourdough loaves and pizza base but also the science behind the process. All information was delivered in a clear, easy to understand manner and very collaborative. The whole day was relaxed and engaging and passed quickly. I have continued to bake sourdough bread pretty constantly since attending and although always delicious (the process works) my presentation still needs to be worked on (due to little lacks of concentration usually). I would thoroughly recommend the course to individuals or small groups. Thanks Mark, it was a great day and a pleasure to meet you.

    As a Sourdough baker who started my own starter during Covid and was struggling to improve my bread I really appreciated Mark's course. It was a good beginners course but Mark usefully extended it where necessary. I think two of the most significant things I learnt from the course were a process that minimises that starter management hassle and how to make repeatedly good bread. I still try to extend it with mixed results but the bread is always good. We also had a really sociable time chatting together as a group.

    I had a very enjoyable day at South Downs Sourdough. Mark taught the three of us (sourdough students :-) in a very relaxed atmosphere and pace the ins and outs of baking with sourdough. He was very flexible when I asked to change one of my breads to make baguettes instead. It was also my first time of using sourdough to make a pizza base which has since become a staple in our house for flexible and quick dinners. I have a pizza dough ready to go in the fridge most days - always popular with the younger generation. Thanks Mark for a very well 'designed' sourdough day!
