This place is, by far, the best Vietnamese restaurant in Manchester, and perhaps in the UK too. I ordered the Hue style noodle to take away, and even before tasting it, I knew it'd be good: the noodle itself, the broth and the herbs were all packed separately, so that the heat won't overcook the delicate herbs (a sign that the restaurant care about how you enjoy their food to make sure it can be at its best, rather than simply lobbing things together). It was very good value for money, not just in terms of quantity, but the variety of ingredients included as well. Where most Vietnamese restaurants fail to be authentic is the use of few ingredients, either out of stinginess or laziness. This place is a rare difference: the noodle dish I ordered had 4 different types of meat (beef, pork, meatballs and Vietnamese ham). The beef was from a good cut (suitable for this type of soup) and sliced thinly for tenderness. They were also generous with the herbs (again, unlike most places I've been to). Best of all is the right ratio of broth and noodle. They give you a full box of broth, which matches the amount of noodle, meat and veg - this is super important because as any noodle fan knows, it's the broth that makes or breaks the noodle, and not having enough broth for the noodle is not just annoying. It ruins the whole thing. This is the case with many Vietnamese restaurants, for example, 'Cafe Viet', the one right next to this one. Finally, as mentioned in some of the comments here, their staff are lovely! especially the old gentleman who is probably the chef. He's so friendly and attentive - again, rather different from Cafe Viet next door whose staff aren't terribly attentive, possibly because of how busy they are? (after the last time when I had to wait there for 40 mins for a takeaway order, I probably won't come back to Cafe Viet...). If you like Vietnamese food and haven't tried this place, do give it a try! They deserve to be successful for their efforts to prioritise authenticity and good quality over laziness and profits :)
