    We opened a small Pizza al Taglio Take-Away while I had to learn how to make this dough in a very short time. Francesco came to our Restaurant and helped us to develop the doughs basically from scratch - as we dont have the traditional dough, it was much more complex. Also did he support us tremendously with the new processes involved. I can definitely recommend Franceso!

    Met with Francesco for a week in London doing Neapolitan and classic style pizzas in November 2019. Although I had been a pizzaiolo for many years, I didn’t know the science of the flours and the yeast and how different flours require different proving times and how to get the best out of each flour which helped me make a better product and also a more consistent product throughout the year when the temperatures are cooler or hotter. Francesco also showed me a better way to roll the dough outs which again provided a more consistent product. We ran though everything, from the dough to best way to store the doughs, oven temperatures, layout of the kitchen and also recipes. This is the best thing I did for my business because pizzas sales increased by 40% and also during the lockdowns I was able to develop a better pizza by mixing flour which all stems back to having the understanding on the flour. Having more understand of flour has enabled me to to expand my products made in house from fresh bread everyday to even fresh pasta. I can’t thank Francesco enough, great guy who know his stuff and is patient and passionate about good products.
