As well as black pudding the tripe is also the star of the show at The Real Lancashire Black Pudding Company. So far I have only found it at Morrions where I buy it from. The tripe is already prepared and cooked hence it is lovely and soft. It was perfect for tripe and onions and also with plain salt and vinegar! Don't let this tradition go! Eat more tripe and onions.
