Update. May 2023: Visited this ramen shop again and now the Tonkotsu ramen is on par with the London ramen stores. That’s now 4 stars from me. Not as well flavoured as few London Ramen places but pretty good for Brighton.

We were eating here pretty much every week for ages...until the rest of the world got to hear just how good it was! Now we only choose to eat there first thing; otherwise you end up queuing on an empty stomach. BTW We're vegan, of which there are 4 main course alternatives on the menu as well as a number of starters. All proper scrummy. Vegetarian options: Vegan alternatives

The ramen was great - among the best ones I have tried in my life. Both Tonkotsu ramen and Tokyo ramen were delicious and the difference between them existed but was not too big. The marinated egg was superb and had very good taste to it, much different from just a regular egg. The small portion of ramen is really small and I would not recommend ordering it unless you are not hungry at all. The medium size portion is the sweet spot you are looking for. Kim chi was a bit below expectations and plum wine was good. Staff was welcoming but could not advise on ramen size compared to other ramen places
